Chia Seed Pudding me in a good mood.

I’ve seen this all over the internet, so when I found it on the menu at a local restaurant I had to try. Let me tell you, it did not disappoint. It was so creamy and had this insane coconut whipped cream on top. BUT it was obviously packed with sugar and calories. So I set out to find a good recipe that would be much healthier. It turns out Chia Seed Pudding is ridiculously easy to make. Chia seeds are full of healthy omega-3 fatty acids. They also have 11 grams of fiber per ounce, and 18% of the RDA of Calcium per ounce (that’s more than milk) . So far so good, ya feel me?

So basically you can add chia seed to any liquid and it turns to a pudding. I chose unsweetened coconut milk. And then you can sweeten it however you please. Stevia has no calories and is extremely potent, so if you fancy stevia (which I do not) add a small drop. I used a tablespoon of honey in my recipe. I chose slivered almonds and dark chocolate to add to my first batch. I then sliced bananas and topped it off. Oh my, it was so good. Here’s the recipe:

  1. 2 cups unsweetened coconut milk

  2. 1/2 cup chia seeds

  3. 1/2 teaspoon vanilla extract

  4. 1 tablespoon honey

  5. 1 tablespoon dark chocolate chips

  6. 2 tablespoons slivered almonds

  7. Makes 4 servings

  8. About 174 Calories per serving!

You literally just put the coconut milk and chia seeds in a bowl and whisk it. Then add the other ingredients and whisk it again. Throw it in the fridge for a few hours and its good to go. Over night will get you the best results, but I couldn’t wait more than two hours and it was still amazing.

I then made the same thing but added Green Tea Matcha! It was even better, and added a bit of caffeine. I put one serving of the matcha into the mixture. It’s gonna be perfect for breakfast tomorrow.
