Cauliflower Stir-Fry

Praise the Lord for cauliflower rice. The once forgotten vegetable is making an incredible comeback, and I am really grateful for it. One of the easiest things I make is a cauliflower stir fry, it is cheap and easy to make. I can throw virtually anything in there and it tastes delicious. This most recent dish I made was with, mushrooms, tomato, spinach,  and fresh chopped garlic. If you want you can add tofu or any protein you prefer as well. 


2 cloves of garlic chopped

6 oz of sliced mushrooms

1 handful of Roma tomato’s halved

2 cups Spinach

8 oz Cauliflower rice

2 tablespoons olive oil

Sea Salt to taste

Whole lemon

Add Olive oil and garlic to pan on medium heat, sauté for 3 minutes or until garlic is lightly browned. Add cauliflower rice and stir for approximately 5 minutes. Add mushroom and spinach. You will be constantly stirring this dish, as you continue to add the ingredients. When the spinach leafs have wilted squeeze one full lemon into the pan. Add sea salt to your liking (taste as you go). Top with Roma tomato and let simmer for a few more minutes, or until the cauliflower has softened. Serves approximately 5-8.
